And if Christmas carols, nativity scenes, ornaments and the three Kings are a must at Christmas, the other main protagonists are the dishes you enjoy at the table on 24th December.
Due to our maritime origins we like to include fish fishes, especially with onions. Without doubt, the stars of the show are wreckfish and cod. When it comes to meat, it is typical to eat rabbit and goat in “salmorejo” sauce. These dishes are always accompanied by our famous potatoes. Equally important, if not more so,are the typical sweets among which are: Vilana cake, an ever present dessert on any table on the island of La Gomera , “truchas” with sweet potatoes, “bienmesabe” and marzipan from Tejeda in Gran Canaria.
TRUCHAS
“Truchas” have a special place reserved for them on Canary Islands tables during this time. We can find them at any bakery, but they are still handmade for Christmas in the kitchens of houses throughout the islands. Its shape is similar to that of a small pasty and prepared with a filling of sweet potato or pumkin jam. The ingredients are: flour, sweet potato, sugar, almonds, lemon zeast, butter, olive oil, and cinnamon . Delightful!
